Why did both springs break at once?

They usually do not break at the same moment - one broke and the second was replaced at the same time, or the second failed weeks later. Springs installed together have near-identical cycle counts, so when one goes the other is at the end of its life too. That is the whole argument for replacing the pair.

Can the spring be adjusted instead of replaced?

A spring that has lost tension but is intact can sometimes be re-tensioned, and that is a legitimate 15-minute fix. A spring with a visible gap in the coil is broken and cannot be adjusted. If a company offers to adjust a visibly broken spring, get another quote.
